Analysis of trends in local and international consumption of superfoods in Ecuador

Abstract
In the last decade, foods known as superfoods have skyrocketed in popularity, promoting a change in eating habits and completely changing the companies in the food segment. There is no doubt that superfoods are known as foods with great nutritional power. According to surveys, in the last five years during the Covid-19 pandemic, superfoods had an increase in their local and international consumption trend of 202% due to the fact that as a result of the pandemic many people presented chronic diseases that led the Ecuadorian population to improve their quality of life through superfoods to prevent or treat these types of diseases. This research article sought to analyze the increase of a new trend preferred by the Ecuadorian consumer both locally and internationally due to the global health crisis Covid-19 that affected in various aspects both socially and economically and as a result awakened the consumer's need to improve their quality of life and the quality of the food they consume, for that reason this research is undertaken that sought to identify, determine and define the various causes and consequences of the increased presence of superfoods in different markets in the world. This project provided research results regarding this new commercial phenomenon known as superfoods and determined a new exportable supply opportunity for Ecuador in this new trend that is being handled at the international level.
